A garden menu and special Earth Day cocktails are offered in April. Executive Chef Kris Morningstar showcases herbs and vegetables from his on-site garden in his 3-course menu for $35. An Earth Day Collins for $12 features Aviation Gin, lavender basil syrup, fresh juice and fever tree soda water.

Sample Earth Day menu includes: Pig’s Ear Salad, Ray’s garden Kale & Mustard, Horseradish Vinaigrette, Marinated Beets. Ricotta Gnocchi – Ray’s garden Pea Greens & Snap Peas, Bianco Sardo. Rose Geranium Panna Cotta – Rose Wine Soup, Shortbread Cookie, Strawberries from Ray’s garden.

The book presents 52 recipes for floral arrangements using twigs, seedpods, edibles and posies. Debra demonstrates sustainable floral design in a hands-on workshop. Cakes for a Cause at La Monarca Bakery 

From April 22 (EARTH DAY) to 28 La Monarca Bakery will donate 10% of the proceeds from all cake sales to ECOLIFE Foundation, a program IMG_1491in Michoacan, Mexico that protects Monarch butterflies. The butterfly population is down to its lowest level since 1976, due to the the decimation of forests.
ECOLIFE is protecting existing forests by constructing fuel-efficient stoves to reduce the cutting of wood for fuel.  Del Mar Earth Day at L’Auberge

Located in the picturesque coastal village of Del Mar, L’Auberge Del Mar overlooks the Pacific Ocean and offers 120 guest rooms and suites, 404dining options, cozy spa, a private path to the beach and peaceful pool area.

On Monday, April 22 attend the first annual Ocean Preservation Paddle Out event to raise awareness for Ocean Preservation. Concierge will arrange board rentals. Meet at Powerhouse Park at 9 a.m.

The Hotel will feature “Green” dining, drink and spa specials. Executive Chef Scott Thomas Dolbee prepares an Earth Day entrée: Roots, Leaves & Shoots. This green-friendly, vegetarian dish features local, sustainable and seasonal ingredients including carrots, sunchokes, pea shoots, romanesco, cauliflower, morels and steel-cut oats. The entrée is priced at $19 and will be available in KITCHEN 1540 on April 21 and 22.

In the Living Room Bar, guests can savor ocean views while sipping the hotel’s eco-friendly Lovely Lavender Lemonadecocktail. This refreshing “green” concoction is made from organic lavender vodka, strawberries, mint and lemonade. In honor of Earth Day, the cocktail will be priced at $10 (normally $12) on April 21 and 22.

The Green Spa Treatment is offering a Seaweed Scrub is a soothing, purifying and detoxifying treatment that nourishes the body. This 80 minute treatment is offered for a special price of $165 (reg. $185) from April 20-22.
